Veg and Potato Soup

Pick your veg and potatoes of choice to create a hearty winter meal

This recipe is super flexible! Pick the veg you like, pick the potatoes if you would like some carbs and choose how much of what you would like in your soup - totally tailored to your taste. The ingredients below are what I chose to use based on what veg I had left that week and a few favourites.


Through all the ingredients in the slow cooker and leave to cook, no attention or stirring required. Then at the end you just need to blitz it all up. It is also completely vegan


Soup can be easily frozen and saved for a cold winters day. I served mine up with a crusty roll but can just be enjoyed as is.


Veg and Potato Soup

Serves approx 10


Ingredients

  • One large white onion, diced

  • 3 large sweet potatoes, peeled and chopped into chunks

  • Butternut squash, chopped into chunks

  • Cabbage, sliced

  • Carrots, peeled and chopped into rounds

  • Mixed squash, chopped into chunks

  • 500 ml vegetable stock

  • Herbs (optional)

Directions

  1. Add all the ingredients, other than the herbs if using, to the slow cooker and cook on low for 8 hours or high for 4 hours

  2. Blitz up the cooked vegetables, I used an emersion blender

  3. Add around 4tbsp herbs and season well, mix and serve or freeze
