Jerk Pulled Pork

This juicy recipe is super easy and has few ingredients, a perfect way to spice up your midweek meal.



Jerk pulled pork is a great crowd pleaser and this recipe is super easy to do in a slow cooker. Cooking the pork at a low heat and for a long time, makes the meat fall apart perfectly to produce pulled pork. The jerk seasoning adds a kick, whilst the pineapple juice and sugar adds sweetness, the perfect balance. The recipe calls for a little cooking in the oven which caramelises the sugars in the dish, most slow cooker pots are oven safe but please check first.



I served mine up in wraps, alongside an avocado salsa (avocado, chilli, red onion, lime juice and seasoning, almost like a Mexican guac) and shredded lettuce in a yogurt dressing. This can also be enjoyed with sweet potato and spring greens or even in classic pulled pork buns.




Jerk Pulled Pork

Ingredients

Serves 4

  • 600g pork fillet

  • 4 tbsp jerk seasoning

  • 2 tbsp brown sugar

  • 400 ml pineapple juice

  • 1 x can of beans (I used gungo peas)

Directions

  1. Rub the jerk seasoning and sugar into the pork fillet and place into slow cooker

  2. Pour over the pineapple juice, cover and cook on low for 7-8 hours

  3. Heat the oven to 140 degrees and cook uncovered for 40 mins or until the sauce has caramelised and reduced down

  4. Heat the beans in the microwave

  5. Shred the pork using two forks and pour in any pot juices, if the pork is looking a little dry add a bit more pineapple juice

  6. Mix the beans in with the shredded pork and serve
