Simple but effected dish with little faff, great for when you don't have much time. The slowcooker perfectly softens the beef mince, sweet potato and vegetables. The herbs and seasoning add that little extra flavour for minimal effort.
I served mine up with green beans for some extra veggies for the day, however, you can just eat as is. Also, great for freezing leftovers for another day and can easily be scaled up or down.
Sweet potato & beef stew
Serves 4
Ingredients

500g beef mince
2 sweet potatoes (or one large) peeled and chopped into chunks
4 carrots diced
1 white large onion diced
500g passata
2 bay leaves
handful of thyme leaves
2 tbsp dried mixed herbs
Directions
Heat a frying pan and fry off the onions until soft, set aside
Fry off the mincemeat until browned
Add all the ingredients to the slow cooker, season well with salt and pepper and mix
Cook for 8 hours on low or 4 hours on high
