Summer Chicken and Vegetable One Pot

Light and fresh dish perfect for summer evenings with few ingredients and steps

This recipe creates a herby and light sauce which makes it great for a summer evening when you do not want anything to heavy. This is complimented by succulent chicken, soft potatoes and sneaks in some veg.


The dish has few ingredients and steps so can easily be done when you haven't got much time. You could also use other cuts of chicken such as chicken breast or legs. As well as swapping around the veg for spinach, broccoli, peas or mangetout to mix it up.


Summer Chicken and Vegetable One Pot

Ingredients

Serves 4

  • 4 large chicken thighs (or 8 small ones)

  • 350g green beans (or other green veg)

  • 400ml chicken stock

  • handful of mixed herbs (finely chopped if using fresh herbs)

  • 600g baby potatoes chopped into chunks

  • 200ml crème fraiche

Directions

  1. Heat oil in a pan and brown of the chicken thighs, transfer to slow cooker.

  2. Add the herbs, chicken stock, green beans, potatoes and season with salt and pepper. Gently stir.

  3. Cook for 8 hours on low.

  4. 15 minutes before serving add the crème fraiche and mix into the sauce.

  5. Serve and add more seasoning if necessary.
