Sticky-Sweet Pork Ribs with Vietnamese-Style Salad

A sweet sauce cooked alongside the ribs, complimented by a sharp salad.

Cooking saucy ribs in the slow cooker is super easy, just put it all in the slow cooker. The ribs absorb the sweet and savoury sauce as they become juicy and tender. The salad also does not need any additional cooking just some preparation, taking around 5-10 minutes. Don't let the long list of ingredients fool you!


I also served mine up with some rice to soak up all the sauce.


Ingredients

Serves 2

  • 700g rack of ribs

Slow cooker rib sauce:

  • 6 tbsp hoisin sauce

  • 3 tbsp honey

  • 3 tbsp rice vinegar

  • 3 tbsp soy sauce

  • 4 tbsp tomato ketchup

  • 1 tbsp dried ginger or 2.5cm piece ginger peeled and finely chopped

For the salad:

  • 1/4 cucumber cut into ribbons using a peeler

  • 6 radishes, thinly sliced

  • 2 spring onions, thinly sliced

  • handful of mint leaves, torn

  • 150g sugar snaps, halved horizontally

For salad dressing:

  • 1 red chilli, finely chopped

  • 2 garlic clove, peeled and grated

  • 1 lime juiced

  • 2 tbsp rice wine vinegar

Directions

  1. Put the rack of ribs in the slow cooker (you may need to cut them in half to fit)

  2. Mix the slow cooker rib sauce ingredients and add to the slow cooker, coating the ribs

  3. Cook on low for 8-9 hours

Salad Directions:

  1. Mix all the dressing ingredients in a bowl

  2. Add the salad ingredients and toss
