A vegetarian classic which is very easy in the slow cooker.
A rich tomato based dish with flavours of basil. A midweek meal that definitely gets in those 5 a day, rammed full of veg and flavour! (No rats were harmed in the making of this dish)
I served mine up with some sourdough bread (part baked).
Ingredients
Serves 4
1 red onion, diced
4 garlic cloves, crushed
2 courgettes, cut into rounds
3 mixed peppers, sliced
4 large tomatoes, sliced
small bunch basil, roughly chopped plus some leaves for garnish
400g passata
1 tbsp white wine vinegar
Directions
Fry off the onion, followed by the garlic followed by the rest of the veg
Add all the ingredients to the slow cooker
Cook on low for 6 hours or on high for 3 hours
