Pork Fajita Pita

Add some spice to your mid week meal with this easy recipe

The pork fajita mix is so easy to make in the slow cooker, and then you just have to serve it up with compliments of your choosing. Whether you want super simple or intricate.


I used pitas for mine but tortilla wraps or taco shell would work just as well. I served mine up with homemade guacamole and salsa, as well as gem lettuce, smoked cheddar cheese, and hot sauce. But could also be served with sour cream.

Ingredients

Serves 2

  • 300g pork fillet, chopped into chunks

  • 2 peppers, cut into slices

  • 1 white onion, halved and sliced

  • 2 chillies, diced

  • 1 tbsp paprika

  • 1 tsp cumin

  • 2 cloves garlic, crushed

  • 1/2 Tbsp tomato paste

  • 1/2 Tbsp honey


Directions

  1. Put all ingredients in the slow cooker, mix well

  2. Cook on low 6-8 hours or high for 3-4 hours
