Pearl Barley and Beef Stew

One pot dish perfection



Delicious stew with the added benefits of pearl barley which is rich in vitamins minerals and fibre. I used peppers as a veg but could also use mushrooms or broccoli. You do need to add the dry pearl barley towards the end of the cooking time, or you could add pre made pearl barley right at the end.


Ingredients

Sevres 4

  • 100g pearl barley dry

  • 750g beef stewing steak, cut into chunks

  • 700ml beef stock

  • 2 white onions, diced

  • 4 garlic cloves, crushed

  • 3 sprigs rosemary, leaves removed and diced

  • 1 tsp dried chilling

  • 3 peppers, sliced


Directions

  1. Heat a little oil in a pan, fry off the beef until browned.

  2. Add the beef to the slowcooker with the rest of the ingredients, other than the pearl barley. Mix well

  3. Cook on low for 8 hours or 4 hours on high

  4. Add the pearl barley with 2 hours remaining on low or 1 hour remaining on high
