Peanut Miso Chicken


Fairly simple recipe to mix up those midweek meals. Can mix up how you choose to serve it. I served mine up with cauliflower rice, fried off in some soy suace and a pinch of tumeric, lettuce wraps and a sprinkle of spring onion and chillies.


Ingredients

Serves 2

  • 2 chicken breast chopped into chunks or 4 boneless chicken thighs

  • 3 tbsp peanut butter

  • 1 tbsp miso paste

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp ginger paste

  • 2 cloves garlic, crushed

  • 2 chillies (medium spice levels)

  • 1 teaspoon sesame oil


Directions

  1. Put all the ingredients in the slow cooker and mix

  2. Cook for 2.5 hours on high or 5 hours on low
