Fairly simple recipe to mix up those midweek meals. Can mix up how you choose to serve it. I served mine up with cauliflower rice, fried off in some soy suace and a pinch of tumeric, lettuce wraps and a sprinkle of spring onion and chillies.
Ingredients
Serves 2
2 chicken breast chopped into chunks or 4 boneless chicken thighs
3 tbsp peanut butter
1 tbsp miso paste
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp ginger paste
2 cloves garlic, crushed
2 chillies (medium spice levels)
1 teaspoon sesame oil
Directions
Put all the ingredients in the slow cooker and mix
Cook for 2.5 hours on high or 5 hours on low
