Parmesan Chicken

Cheesy chicken, with veg and potatoes all in one pot

All your dinner in one pot, just serve up when it is ready and enjoy! The parmesan brings in that delicious cheese flavouring which soaks into the chicken, veg and butter as it cooks. This recipe also has a bit of butter which adds to the richness of the sauce.


I used chicken thighs but could also be made using chicken breasts or chicken legs. You can also switch up the veg to what you fancy!


Ingredients

Serves 4

  • 4-6 chicken thighs depending on size

  • 4 garlic cloves crushed

  • 750g baby potatoes, halved

  • 3tbsp butter

  • 3tbsp grated parmesan, plus extra for serving

  • 340g trimmed green beans

  • handful mixed herbs finely chopped, or 3tbsp dried herbs

Directions

  1. Heat a pan with a little oil on a high heat, fry off the chicken things until browned (about 3 mins each side)

  2. In the slow cooker add the butter, garlic, herbs and cheese and mix up

  3. Add the potatoes, trimmed green beans and chicken and mix into the butter sauce with some salt and pepper (parmesan is quite salty so be careful not to over season)

  4. Cook on low for 6 hours or 3 hours on high,
