Mexican Beef One Pot

A spicy one pot to save on the washing up without skimping on flavour

The beef cooks away and breaks down in the delicious Mexican flavours. It is then really easy to add the rice and stock to have your whole meal in the same pot.


I did serve mine up with some sour cream dip I had in the fridge for extra flavour.

Ingredients

Serves 2

  • 400g shin beef or braising steak, chopped into chunks

  • 2 peppers (I used red and green), sliced

  • 1 white onion, diced

  • 2 tbsp paprika

  • 2 tsp cumin

  • 2 tsp chilli flakes

  • 1/4 tsp cinnamon

  • 1/4 tsp ginger

  • 3 cloves garlic, crushed

  • 200g tomato passata

  • 120g rice

  • 200ml beef stock

  • handful of grated cheese


Direction

  1. Optional: Heat oil in a pan and fry off the beef, this will add lots of flavour to the dish

  2. Add all ingredients to the pan other than the rice, stock and cheese

  3. Cook on low for 8 hours or 4 hours on high

  4. Add the rice and stock and cook on high for 45 minutes

  5. Add the cheese until melted (couple of minutes)
