Light and Nutty Chicken Curry

A healthier version of a chicken korma which does not compromise on taste

My take on a chicken korma without the calories. You and your loved ones can enjoy this curry any night of the week. It is very quick and easy, with a few optional extras to make it fancier if desired. The recipe makes a very mild curry but you can add chillies to spice it up if you desire.


Serve it up with white basmati rice. You could also serve up some naan breads or poppadoms.


Ingredients

Serves 4

  • 4 chicken breasts, chopped into chunks

  • 1 white onion, diced

  • 2 garlic cloves, crushed

  • 2tbsp ground almonds

  • 2tbsp mild curry powder

  • 1 tbsp paprika

  • Thumb sized piece of ginger (roughly chopped)

  • 1 chicken stock cube

  • 150g fat free Greek yogurt

  • 75g raisins or sultanas (optional)

  • Handful flaked almonds (optional)

Directions

  1. Add chicken, onion, garlic, curry powder, ground almonds, paprika, raisins or sultanas (optional) and 150ml water to the slow cooker. Crumble in the stock cube and stir well

  2. Cook for 8 hours on low

  3. Take off the pot out of the slow cooker and stir in the yogurt, serve up and scatter on flaked almonds (optional)
