Lentil and Spinach Curry


A delicious and aromatic vegan slow cooker dish.


I love to cook lentils in the slow cooker as it makes it very easy to get right. It also allows the spices to stew into the curry sauce. I served mine up with flatbread, yogurt and tamarind sauce, but could also be enjoyed with rice.

Ingredients

Serves 4

  • 1 white onion, diced

  • 1 red onion, diced

  • 2 tbsp tomato paste

  • 1 tbsp ginger paste

  • 6 cloves garlic, crushed

  • 2 tbsp madras curry powder

  • 1 tbsp ground paprika

  • 1/2 tbsp ground turmeric

  • 1/2 tbsp ground cumin

  • 2 cups green lentils

  • 5 cups veg stock

  • 2 handfuls of spinach


Directions

  1. Heat a little oil in a pan. Fry off the onions with the ginger and ground spices for 5-10 mins

  2. Add the garlic and tomato paste and cook for 2 mins

  3. Add to the slow cooker with the lentils and stock

  4. Cook for 4 hours on high and 4 hours on low

  5. Add the spinach and mix, let it wilt (takes about 10 mins)
