Kung Pao Chicken Stir Fry

A delicious stir fry all in one pot!

Super easy dish all in one pot with classic Asian flavours. I add the veg towards the end to ensure they keep a bit of bite and don't go really soft. It is also really handy that you can add the noodles right at the end just to warm through.


Ingredients

Serves 2

  • 2 chicken breasts, chopped into chunks

  • 1 courgette, sliced into rings then halved

  • 1 red pepper, sliced

  • 2 chillies, diced (or more if you like a lot of spice)

  • 4 tbsp soy sauce

  • 2 tbsp hoisin sauce

  • 2 tbsp honey

  • 1 tsp ginger powder

  • 2 garlic cloves, crushed

  • a packet of straight to wok noodles (usually come in pack of 2 single portions)

  • 2 spring onions, chopped into rounds (optional garnish)

Directions

  1. Mix the soy sauce, hoisin sauce, honey, ginger, garlic and chillies in a bowl

  2. Add the sauce mix and the chicken, to the slow cooker and mix

  3. Cook for 6 hours on low, 30 minutes before the end add the pepper, 20 minutes before add the courgette, 5 mins before the end add the noodles

  4. Serve and scatter over the spring onions
