Winter is coming, bring on the hearty stews!
This Italian inspired stew packs a lot of veggies as well as tender beef, perfect as the evenings get chillier.
I served mine up with potato but you could do dumplings following the dumpling instructions from one of my other recipes.
Ingredients
Serves 2
1 white onion, diced
2 carrots, diced
1 celery stick, diced
250g mushrooms, sliced
300g braising beef, cut into chunks
100ml red wine
150ml stock
3 sprigs of thyme
Parsley, for decoration
Directions
Heat oil in a pan, brown off the beef and set aside
Add the wine and allow to boil for a couple of minutes to burn off the alcohol
Add the stock and bring to boil
Add to the slow cooker with the rest of the ingredients and mix up
Cook on low for 8 hours or high for 4 hours
