Honey and Lime Chicken Tacos

Sweet and sharp twist on a Mexican classic

Really easy dish to bung all in the slow cooker and forget about it. Just a small amount of prep and then serve it up with what you fancy (this can also require no cooking). The lime brings a sharpness that cuts through the sweetness of the honey which all gets soaked into the chicken.


I served mine with corn tortillas, homemade salsa, homemade guacamole and sour cream. I have included the homemade salsa and guac as bonus recipes at the bottom.


Ingredients

Serves 4

  • 4 chicken breasts

  • 3 tbsp honey

  • 1 lime, juiced

  • 4 tomatoes, diced

  • 1 red onion, diced

  • 1 tsp cumin

  • 1 tbsp paprika

  • 3 garlic cloves, crushed

  • half tbsp hot sauce (or more if you like a lot of spice!)

To serve:

  • corn tortillas

  • sour cream

  • salsa

  • avocado /guacamole

  • lettuce/salad leaves

Directions

  1. Place all the ingredients in the slow cooker and mix well

  2. Cook for 3 hours on high or 6 hours on low

  3. Shred the chicken (it should fall apart very easily) and mix to soak up all the juices

Salsa (bonus recipe)

Serves 4

  • 4 tomatoes, diced

  • 1 large red onion, diced

  • 1 lime, juiced

  • handful of parsley roughly chopped or 3 tbsp dried parsley

  • salt and pepper

Mix all the ingredients together and season.


Guacamole (bonus recipe)

Serves 4

  • 2 very ripe avocados, mashed

  • 1 large red onion, diced

  • 1 lime, juiced

  • 2-4 chillies, diced (depending on spice level)

  • salt and pepper

Mix all the ingredients together and season.
