Sweet and sharp twist on a Mexican classic
Really easy dish to bung all in the slow cooker and forget about it. Just a small amount of prep and then serve it up with what you fancy (this can also require no cooking). The lime brings a sharpness that cuts through the sweetness of the honey which all gets soaked into the chicken.
I served mine with corn tortillas, homemade salsa, homemade guacamole and sour cream. I have included the homemade salsa and guac as bonus recipes at the bottom.
Ingredients
Serves 4
4 chicken breasts
3 tbsp honey
1 lime, juiced
4 tomatoes, diced
1 red onion, diced
1 tsp cumin
1 tbsp paprika
3 garlic cloves, crushed
half tbsp hot sauce (or more if you like a lot of spice!)
To serve:
corn tortillas
sour cream
salsa
avocado /guacamole
lettuce/salad leaves
Directions
Place all the ingredients in the slow cooker and mix well
Cook for 3 hours on high or 6 hours on low
Shred the chicken (it should fall apart very easily) and mix to soak up all the juices
Salsa (bonus recipe)
Serves 4
4 tomatoes, diced
1 large red onion, diced
1 lime, juiced
handful of parsley roughly chopped or 3 tbsp dried parsley
salt and pepper
Mix all the ingredients together and season.
Guacamole (bonus recipe)
Serves 4
2 very ripe avocados, mashed
1 large red onion, diced
1 lime, juiced
2-4 chillies, diced (depending on spice level)
salt and pepper
Mix all the ingredients together and season.
