Harissa Chicken Stew

Easy stew to spice up your midweek meals


An easy it throw it all in dish. You could alternatively use chicken thighs (about 600g) instead of breasts and any other vegetable you fancy. I served mine up with homemade crusty baguette.


Ingredients

Serves 4

4 chicken breasts

3 tbsp harissa paste

4 garlic cloves, crushed

1 onion, diced

2 red chili, diced

2 tbsp paprika

2 tsp cumin

1 chicken stock cube

3 peppers

1 can chopped tomatoes

1 can chickpeas

3 handfuls spinach


Directions

  1. Add all the ingredients to the slow cooker (crumble in the stock cube) apart from the spinach, season and mix well

  2. Cook for 3 hours on high or 6 hours on low

  3. Add the spinach mix in and allow to wilt (takes about 5 mins- may need to be done in batches!)
