Greek Style Butter Bean and Veg stew

A delicious, healthy and simple vegan stew to be enjoyed all year round.


An easy throw it all in recipe, not loosing out on those delicious Greek flavours. It is also Vegan but still getting protein from the beans and your 5 a day from the veg.


I served mine up with sourdough bread (bought part baked) but could also be enjoyed with a jacket potato or rice.

Ingredients

Serves 4

  • 2x cans butter beans

  • 1 onion, diced

  • 3-4 carrots, diced

  • 3 celery sticks, sliced

  • 500g passata

  • 1 tbsp chilli flakes (depending on spice level)

  • 1 tbsp dried parsley

  • 1 tbsp dried oregano

Directions

  1. Add everything to the slow cooker and mix well

  2. Cook on low for 6 hours or high for 3 hours
