Greek Chicken Wraps

Delicious chicken with Greek seasoning, an easy one for the slow cooker

Cooking the chicken slowly gives it a chance to be enriched with the different spices and herbs, really bringing out the Greek flavours. By the time the slow cooker is done, the chicken just falls apart.


This recipe is super easy, you can just chuck all the ingredients in the slow cooker and mix up! I served mine up with tzatziki and flatbreads which I homemade and have included as a bonus recipes. But if you don't fancy the extra work or are busy, this can be easily purchased from a supermarket so you are ready to eat when the slow cooker is finished!


I also included a salad made up of mixed leaves, tomatoes and red onion.


Greek Chicken Wraps

Serves 3


Ingredients

Slow cooker chicken

  • 600g boneless chicken thighs

  • 2 tsp cumin

  • 2 tsp paprika

  • 1 tsp turmeric

  • 1 tsp cayenne pepper

  • 3 garlic cloves, crushed

  • juice of half a lemon

  • few sprigs of oregano, leaves removed and roughly chopped

  • 1 tbsp dried mixed herbs

  • 2 tbsp olive oil

Yogurt Flatbreads (bonus recipe)

Makes 1 small flatbread (2-3 per person)

  • 25g Greek yogurt (low or full fat)

  • 25g plain flour

Tzatziki (bonus recipe)

Serves 3-4 people

  • 200g Greek yogurt (low or full fat)

  • quarter of a cucumber, grated

  • handful of mint leaves, finely chopped

  • 1 tbsp lemon juice

  • 3 garlic cloves, crushed

Directions

  1. Place all the slow cooker chicken ingredients in the slow cooker, season and mix well

  2. Cook on low for 6 hours or 3 hours on high

  3. Lightly shred the chicken before serving (should just fall apart)

  4. (bonus recipe) To make the flatbreads, mix ingredients to form a dough and knead for about 2 mins. Roll out on a floured surface. Heat a frying pan on a medium heat. Place the flatbread into the dry pan and cook on each side for about 2-3 minutes.

  5. (bonus recipe) To make the Tzatziki, add all the ingredients to a bowl, season and mix well.
