Easy Chicken, Potato and Veg One Pot

Meat, carbs and two veg, all in one pot!

This is a very easy dish, ticking off your meat, veg and carbs all in one. Just need to set up the dish and leave to cook and it will be ready to serve straight away when the time is up.


You can use different veg to carrots and runner beans such as peas, spinach or kale


Ingredients

Serves 4

  • 4 large (or 6 smalls) chicken thighs

  • 4 spring onions, diced

  • 3-4 carrots, diced

  • Runner beans, chopped and destringed

  • 700g potatoes chopped into chunks

  • 1 chicken stock cube

  • 2 tbsp mixed dried herbs (or mix of fresh herbs, diced)

  • 2 tbsp wholegrain mustard

  • 2 tbsp flour

Directions

  1. Heat a pan with a little oil, fry off the chicken thighs until browned, place aside

  2. Add the spring onion to the pan, add the stock cube and flour stir for one minute as they fry in the chicken juices and then add 200ml water gradually

  3. Add to the slow cooker along with the rest of the ingredients and the chicken

  4. Cook for 6 hours on low or 3 hours on high
