
An easy crowd pleaser which you can make your own! I put peppers in mine but spinach (and lots of other veggies) would work just as well. If you are feeling extra fancy you could also add some basil to the mix!
I served mine up with homemade tagliatelle and also froze half the chicken mix for leftovers for another day.
Ingredients
Serves 4
4 chicken breasts, chopped into chunks
1 can tinned tomatoes
2 peppers, sliced
2 tbsp mixed herbs
1 tbsp dried oregano
4 cloves garlic, crushed
165g cream cheese
1 white onion, diced
Directions
Add the chicken, herbs, tinned tomatoes, onions and garlic to the slow cooker
Season with salt and pepper and mix well
Cook on low for 6 hours or 3 hours on high
About half way through the cooking, add the peppers
Add the cream cheese and mix about 10 minutes before the end to warm through
