When your mum says its' chicken fajita's for tea! A classic that's an easy one for the slow cooker, with just two steps!
Spice up your slow cooker meals with this Mexican classic recipe. Cooking the mix for a long time creates juicy chicken and soft peppers, which have absorbed those Mexican flavours.
I served mine up with a tortilla wrap, lettuce, smashed avocado and homemade salsa (which I have included as a bonus recipe). These can all be easily purchased from the supermarket so the dish is ready to go when the slow cooker is done.
Chicken Fajita
Ingredients
Serves 2
300g chicken breasts, chopped into long slices
1 large red pepper, chopped into long slices
1 white onion, diced
2 tbsp paprika
1 tsp cumin
1-3 chilli's, diced
half a lime, juiced
3 tbsp tomato puree
Directions
Add all the ingredients to the slow cooker
Cook on low for 6 hours on low or 3 hours on high
Salsa (bonus recipe)
Serves 2
2 tomatoes, diced
1 small red onion, diced
1 lime, juiced
handful of parsley roughly chopped or 1 tbsp dried parsley
Mix all the ingredients together and season.
