Italian dish packed full of delicious flavours.
Cacciatore means 'hunter' in direct Italian translation and foodwise is means the dish is made 'hunter-style' usually including ingredients such as onions, herbs and tomatoes. This recipe includes these classics as well as lots of other delicious ingredients which really brings the dish together with lots of flavours to stew in the slow cooker creating a deliciously rich sauce. A little more effort in terms of preparations but totally worth it.
I served mine up with orzo as something a little different, but can also be served with rice or potatoes.
Chicken Cacciatore
Serves 4
Ingredients
8 chicken legs
8 rashers of bacon chopped
1 white onion
4 cloves of garlic crushed
500g passata
2 tbsp tomato puree
50ml balsamic vinegar
300ml chicken stock
20 pitted green or black olives, halved
small handful parsley
3 sprigs rosemary
1 tbsp smoked paprika
handful of flour
salt and pepper
Directions
Place flour in a bowl and mix in paprika, salt and pepper. Coat each chicken leg in the flour mix.
Heat a pan, brown of the chicken legs and set aside
Add the bacon, garlic, rosemary and onion, stir fry until onions have softened and bacon is crisped.
Place bacon mix into slow cooker and add passata, tomato puree, vinegar, chicken stock and olives and mix up.
Add the chicken legs and gently coat in sauce.
Cook on low for 8 hours
Serve and scatter with chopped parsley
