Chicken and Chorizo Stew

A hearty meal packed with veggies that went down a treat!

I found the chorizo really added to this dish, bringing in Spanish flavours and adding some spice, being complimented by the sweet tomatoes. Also it has a lot of veggies in so ticks off some of them five a day. There are very few steps so is an easy one!


If you are not a fan of spice then you could use a non spicy chorizo however the spicy chorizo does not over power the dish. I served mine up with rice but could be enjoyed with potatoes or crusty baguette. It can also be frozen, I have a portion in my freezer!


Ingredients

Serves 4

  • 4 chicken breasts (or 3 large)

  • 200g spicy chorizo ring (or non spicy)

  • 1x can chopped tomatoes

  • 50ml chicken stock

  • 3x peppers sliced

  • 1x red onion, sliced

  • 2 tbsp thyme leaves

  • 4 cloves garlic crushed

Directions

  1. Heat a frying pan with a little oil, fry off the chorizo until it starts to crisp, add to slow cooker

  2. Add the rest of the ingredients, season well and mix, cook for 6 hours on low or 3 hours on high
