Sticky, sweet and spicy chicken drumsticks.
I was suppose to make these with wings but unfortunately the local supermarket had run out! But drumsticks were also a suitable just as cheap and tasty alternative. The recipe is pretty easy with just a very small amount of work at the start and then bunging them in the slowcooker.
I served mine up with a blue cheese dip, recipe included below, which offered a cool compliment to the sweet spice. I also served mine with a jacket potato, kale and carrot coleslaw and a small salad. Turn up the spice by adding more Tabasco, this recipe is for a mild spice.
Ingredients
Serves 2
4-6 chicken drumsticks
1 small white onion, diced
2 tbsp tomato puree
1 tbsp oregano
few drops Tabasco or 2 teaspoon chill sauce
2 tsp brown sugar
3 garlic cloves crushed
Directions
Place all the ingredients, other than the chicken, into a food processor and blitz to a pace
Place the chicken in a bowl and coat with the paste, cover and leave in fridge to marinade for minimum 30 mins (I left mine for 2 hours)
Put in the slowcooker for 6 hours on low or 3 hours on high
Bonus Recipe: Blue Cheese Dip
Ingredients:
150g cream fresh or sour cream
75g blue cheese
50g mayonnaise
1 tbsp white wine vinegar
1 tsp Worcestershire sauce
Directions:
Add all the ingredients into a bowl, crumbling in the blue cheese, mix!
