Boston Beans and Pork Belly

A sweet, spicy and savoury meal in one pot. A real zing on the tastebuds!


I served mine up with spicinch and peas but could also be enjoyed with other veg such as broccoli, green beans or cauliflower. Would also be super tasty with some crusty bread or baked potato.

Ingredients

Serves 4

  • 500g pork belly, chopped into chunks

  • 2 cans cannelloni beans

  • 1 large white onion, sliced into chunks

  • 75ml maple syrup

  • 1 tbsp molasses sugar or soft brown sugar

  • 2-3 chillies

  • 1 tbsp smoked paprika

  • 2 tbsp Dijon mustard


Directions

  1. Heat a little oil in a pan and fry off the pork belly until browned

  2. Add to the slow cooker along with the other ingredients and mix well

  3. Cook for 8 hours on low of 4 hours on high
