A hearty Belgium dish packed with delicious flavours.
The beef in this dish stews away in the ale and the stock so it becomes tender and delicious. You could also add in bacon lardons or carrots to mix it up.
I served mine up with a crusty roll and tender stem purple sprouting broccoli.
Ingredients
Serves 2
500g shin or skirt beef, chopped into chunks
1 white onion, diced
4 garlic cloves, crushed
200ml dark ale (or Belgium beer)
200ml beef stock
2tbsp dried herbs
1 tbsp parsley
2 tsps demerara sugar
2 tbsp flour
Directions
Heat a pan with a little oil
Toss the beef in the flour, fry off until browned, set aside
Fry off the onion for a couple of minutes, add the garlic and fry off for a minute
Add beer and bring to the boil for a couple of minutes, then add the stock herbs and sugar. Bring to the boil.
Add the mixture and beef to the slow cooker
Cook on low for 8 hours of 4 hours on high
