Beef Birria

A Mexican delight which suits perfectly for the slow cooker! The beef soaks up all the delicious flavourings and spices, leaving a tasty meal which is sure to please.


I served mine up with lentils and broccoli (to get in the extra veggies!) but also can be enjoyed as a taco or with rice.

Ingredients

Serves 2

  • 300g stewing/chuck beef steak, cut into chunks

  • 2 large chillies, diced

  • 1 white onion, sliced

  • 4 salad tomatoes sliced

  • 3 garlic cloves, crushed

  • 2 tbsp cider vinegar

  • 2 tsp cumin

  • 2 tsp dried oregano

  • 1 tsp cinnamon

  • 1/2 tsp ginger

  • 2 bay leaves

  • 1/2 beef stock cube

  • 50ml water

  • Wedge of lime (optional for serving)


Directions

  1. Heat a little oil in a pan and fry off the beef, until browned all over

  2. Add to the slow cooker with the rest of the ingredients

  3. Cook for 8 hours on low or 4 hours on high
