A delicious stew to prepare yourself for the chilly evenings. The beef cooks nice and slow to become tender and the Guinness mixed with the seasoning creates a delicious sauce.
It’s also great for leftovers and is freezable - I had I leftovers for my lunch a couple of days later. I served mine up with seasonal veggies but could also be enjoyed with potatoes if you’d like some carbs.
Ingredients
Serves 4
750g stewing steak
2 white onions, diced
300ml Guinness
2 tbsp flour
2 tbsp parsley
2 tbsp mixed herbs
2 sticks celery, sliced thinly
2 carrots, diced
1 cube beef stock
Directions
heat a little oil on a pan
Toss the beef in the flour then add to the pan
Fry off until the beef is browned all over, set aside
Add the Guinness to the pan and bring to the boil, allowing to boil for a couple of minutes
Add all the ingredients to the slow cooker, crumbling the stock cube and season with pepper. Mix well
Cook on low for 8 hours and high for 4 hours.
