BBQ Shredded Beef

Sticky, tender beef with the sweet BBQ flavour

A delicious home made BBQ sauce recipe got me thinking about Summer. The beef cooks away and soaks up the sweet flavours becoming super tender and at the end of cooking falls apart.


I served mine up with pitta breads, sweet corn and a salad so required literally no other cooking other than warming up the pittas and sweetcorn. You could also just whack a load of BBQ sauce in instead of making your own for an even easier recipe.


Ingredients

Serves 4

  • 1kg beef brisket

  • 1 white onion, diced

  • 4 garlic cloves, crushed

  • 1 red chillies, diced

  • 1 tbsp tomato puree

  • 2 tbsp honey

  • 100ml white wine vinegar

  • juice of 1 orange

  • 2 tbsp demerara sugar

  • 125ml veg stock

  • 300ml passata

Directions

  1. Heat a pan with a little oil, fry off the beef brisket for about 4 mins on each side and add to slow cooker

  2. Mix together all the other ingredients and add to the slow cooker

  3. Coat the meat in the sauce then cook on low for 8 hours or 4 hours on high

  4. Shred the beef using 2 forks (although it does just fall apart!)
